The most called for recipe at our house is for Charley's Beans, the sweet and hot beans. These beans seem to always get stories about 'the best beans I ever had' from the dinner guests and I get an empty crock pot (or people requesting to take the leftovers home!)

This very simple recipe has turned into one of Anet's favorites. She raves about this one. So matchstick 3 medium carrots, and an equal size pile of Daichon (a Chinese radish) in small cubes 3/16 or so, and ditto for a pile of celery cubed and / or zuchini - Just make the ratios equal in quantity and size. Then sometimes I will add a half a minced red bell pepper and a small pile of minced purple onion for color and a bit more flavor. Now gently mix all the vegetables and the add the sauce to the top and gently but completely mix in the sauce. Note there is no need for another bowl to make the sauce, just start adding the ingredients into the final bowl (works for me anyway!) now the sauce / dressing 2 Tablespoons rice wine vinegar, 2 heaping Tablespoons of hoisin sauce, 1 teaspoon of sesame oil and 1 teaspoon of hot chili oil. mix the sauce and the vegetables gently and completely then chill make this up early in the day and the vegetables soak up the flavor! It really is that simple. As Always, Charley |

Judge by results I always say, especially when talking about food. When you look around and see what bowls are empty, that is very telling. The Kung Pao Chicken bowl is ALWAYS empty. Even when I try to serve it last, after softening everyone up, it still turns up empty. It seems I have to make a double batch to get leftovers. Even that fails sometimes. This recipe has been tuned over the last 20 years to be a piece of heaven. So Here Goes! |

There are a couple of dishes that our guests continue to request and never seem to tire of. Smoked birds is the BIG ONE. Whether it is a smoked chicken or smoked turkey the result is always the same. smiling faces and a pile of bones on the table. We all have favourites, I say, if you know a better recipe for smoked chickens, please let me know! |
